Roasted Tomato & Chicken Sausage Whole Wheat Pasta Recipe

Servings

The Tomatoes:

  • 4 Roma tomato cut into ¼-inch slices
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ teaspoon oregano dried
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground

The Pasta:

  • 1 whole wheat penne pasta 13 ounce box
  • 3 chicken sausages cut into half-circles, pre-cooked
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • 8 basil thinly sliced, fresh leaves
  • ¼ cup parsley flat-leaf, minced
  • Parmesan Cheese for serving, grated

Instructions

The Tomatoes:

  1. Preheat the oven to 450 degrees F. Line a baking sheet with foil and lightly coat with cooking spray.
  2. Place the tomatoes in a single layer on the prepared baking sheet. Drizzle the tomatoes with the olive oil, and sprinkle them with garlic, oregano, salt and pepper.
  3. Roast until the tomatoes are slightly shriveled and soft, 15 to 20 minutes. Roughly chop the tomatoes and set aside.

The Pasta:

  1. While the tomatoes are roasting, cook the pasta according to package directions. Drain.
  2. Heat a large skillet over medium-high heat and lightly coat with cooking spray. Cook the sausages until browned, 7 to 8 minutes.
  3. Add the roasted tomatoes and cooked pasta to the sausage, along with the olive oil, salt, pepper, basil and parsley.
  4. Serve with the Parmesan cheese.
