Rock Candy

Rock Candy is made by cooking a sugar syrup to the hard crack stage, flavoring it with oil and coloring, then quickly pouring it onto a greased sheet to cool and harden. Once cooled, the candy is broken into shards and dusted with powdered sugar to prevent sticking, resulting in hard, crunchy, flavored sugar pieces with a vibrant appearance.

Description

This Rock Candy recipe involves combining granulated sugar, light corn syrup, and water in a saucepan and heating until the mixture reaches 300°F, the hard crack stage in candy making. A candy thermometer or cold water test is used to confirm readiness. Once heated, flavor is added with LorAnn’s flavored oil and color with gel or liquid food coloring, then stirred in rapidly.

The hot syrup is quickly poured onto a greased baking sheet to form a thin layer, which hardens upon cooling for 20 to 30 minutes. The hard sheet is then tapped to break into small shards. To prevent the candy pieces from sticking together, they are dusted on both sides with powdered sugar and stored in an airtight container. The final candy is hard, crunchy, and flavored as chosen.

This simple method allows homemade rock candy with customized flavor and color. Using a candy thermometer ensures proper texture. Cooling in a sunny spot can speed the setting process.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/2 teaspoon LorAnn’s flavored oil or 1 fl. dram
  • Gel food coloring or liquid food coloring
  • powdered sugar for dusting

Instructions

  1. Spray cooking spray on a rimmed baking sheet. I used a 12 inch round pan.
  2. In a large saucepan, add in the first 3 ingredients. Over medium heat, stir until combined and let it cook to 300 degrees F. I would highly recommend using a candy thermometer for this. 300 degrees is the hard crack stage. My mom always filled a measuring cup with ice cold water and dropped a teaspoon of the candy into the water. If the set immediately and was crunchy, it was ready.
  3. After the sugar mixture has reached 300 degrees, remove from the heat. Add in a few drops of food coloring and the flavored oil. Stir vigorously.
  4. Quickly pour the hot sugar mixture onto the greased cookie sheet. Let it cool for 20-30 minutes. I like to sit mine out in the sun room to cool quicker.
  5. Tap on the cookie sheet to release the sheet of candy. Dust both sides of the candy with powdered sugar. Bust the sheet into small pieces and place into an airtight container.
