Rocky Mountain Cookies

Rocky Mountain Cookies combine rolled oats, crisp rice cereal, and chocolate chips in a soft, lightly golden cookie. The mixture of sugars and butter creates a balanced sweetness and tender texture. These cookies offer a satisfying chew with crisp edges, making them a comforting treat for snack time or dessert. The addition of rice cereal adds an enjoyable light crunch that distinguishes them from traditional oatmeal cookies.

Description

Rocky Mountain Cookies bring together familiar baking ingredients with a unique twist by incorporating crisp rice cereal alongside oats and chocolate chips. The dough starts with creamed granulated and brown sugars mixed with softened butter, eggs, and vanilla, which provides a flavorful base with depth from the brown sugar. Flour combined with baking soda, salt, and baking powder is folded in along with old-fashioned oats, rice cereal, and chocolate chips, contributing texture and bursts of chocolate in every bite.

Baked at 350 degrees for 10 to 12 minutes, the cookies develop a lightly golden brown surface while maintaining softness in the center. Dropping spoonfuls on prepared baking sheets ensures evenly sized cookies that hold their shape well. The combination of ingredients offers a balance of chewiness from oats and crispness from the cereal.

These cookies work well for casual snacking or as a sweet accompaniment to coffee or milk. They store well in an airtight container and can be enjoyed over several days. The recipe’s straightforward approach makes it accessible for baking at home without special techniques.
