Description
This Rocky Road recipe melts an equal blend of dark and milk chocolate with coconut oil to provide a glossy finish and prevent cracking. The melted chocolate coats a mix of mini marshmallows, raspberry lollies, desiccated coconut, and roughly chopped unsalted peanuts, distributing sweetness and texture throughout.
The mixture is poured into a lined square pan, chilled for at least three hours until firm. Before cutting, the slab is removed from the fridge about 30 minutes early to ease slicing. The final confection offers a combination of creamy chocolate with chewy, fruity, and crunchy components.
Using baking chocolate or chips ensures smooth melting. The optional coconut oil adds sheen and smooth texture. Variations can include other nuts, dried fruit, or biscuits. The fudge-like treat keeps well refrigerated in warm climates.
Ingredients
Chocolate (read Note 1!):
- 225 - 250g / 8 oz dark chocolate or block, chopped (US: semi-sweet chips, melts or chips, 1 1/2 cups

- 2 tbsp coconut oil prevents cracking, adds bit of sheen, Note 2, or any plain flavoured oil

Instructions
- Line a 20cm/8" square pan with baking paper (parchment paper).
- Melt chocolate - Place chocolate and oil in a bowl. Microwave in 30 second increments, stirring in between, until melted and smooth.
- Add-ins - Stir the Add-ins into the chocolate. Pour into pan, spreading out evenly.
- Refrigerate for 3 hours or until fully cool.
- Cut - Remove from the fridge 30 minutes prior to cutting. I cut into 5 lines, then into hunks for eating or larger pieces for gifting!
Notes
- Use baking melts or chocolate chips for easier, smooth melting; avoid the confectionary aisle chocolate which may seize or burn.
- Coconut oil helps prevent the chocolate from cracking and adds a slight shine.
- Coconut is essential to the texture and flavor, but other nuts, dried fruits, or biscuits can be added according to preference.
- Remove Rocky Road from the fridge 30 minutes before cutting to produce cleaner slices.
- Store refrigerated especially in warm environments; this treat keeps well for several weeks.
