  • 10 ounce bag marshmallows cut into 1/4's, large (not mini
  • 8 ounces semi-sweet baking chocolate
  • 1/2 cup butter cut into chunks
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts optional, chopped

Instructions

  1. Prep pan: Grease a 8x8'' baking pan with non-stick cooking spray or butter (or use 4 mini disposable loaf pans, for gifting).
  2. Cut marshmallows (we use scissors, dipping them in water after each cut, to keep the marshmallow from sticking). Add cut marshmallows to the pan.
  3. Melt Chocolate: In a saucepan over low heat (or a double boiler) add chocolate and butter. Stir constantly until melted and smooth.  Remove from heat and add vanilla extract and walnuts, if using.
  4. Slowly drizzle melted chocolate over marshmallows, gently nudging between the marshmallows as you go, so that the chocolate seeps into all of the cracks.
  5. Refrigerate until set. Store leftovers in the refrigerator for up to 2-3 weeks.

Notes

  • Use large marshmallows cut into quarters for best texture; mini marshmallows do not yield the desired chewiness.
  • If using unsalted butter, add 1/8 tsp salt to balance flavor in the chocolate mixture.
  • Choose high-quality semi-sweet baking chocolate, such as baker's chocolate, for a smooth, rich flavor.
  • Walnuts are optional and add crunch, but can be omitted for a classic marshmallow and chocolate mix.
  • Rocky Road can be made ahead and stored in an airtight container refrigerated for 2-3 weeks.
  • For longer storage, freeze in an airtight container for up to 2 months and thaw in the refrigerator before serving.
