Rocky Road

Rocky Road is a no-bake treat combining melted semisweet chocolate and creamy peanut butter with crunchy walnuts, peanuts, and soft miniature marshmallows. The mixture is cooled to firm up into a rich, chewy, and textured confection that combines nutty, sweet, and creamy flavors. Cut into squares, it's a classic indulgent dessert that sets in the refrigerator for easy serving.

Description

This Rocky Road recipe starts with melting together semisweet chocolate chips and creamy peanut butter to create a smooth and rich base. Chopped walnuts and peanuts add crunch and nutty flavor, while miniature marshmallows folded in last provide soft, chewy bursts contrasting the chocolate and nuts.

The mixture is poured into a lined pan and chilled for a couple of hours to firm. Once set, it is cut into squares for serving. The chocolate and peanut butter pairing lends a creamy, slightly salty complement to the sweet marshmallows and crunchy nuts.

Rocky Road works well as an easy dessert or sweet snack, particularly when you want something that requires no baking. It holds well refrigerated and can be stored for up to two weeks or frozen for longer storage.

Melting can be done either on the stovetop or in the microwave at reduced power. Cooling the chocolate mixture before folding in marshmallows ensures they keep their shape and texture rather than melting into the chocolate.
