Rocky Road Peanut Clusters (Crockpot Candy)

These Rocky Road Peanut Clusters use a slow cooker to melt together vanilla almond bark, semisweet and dark chocolate, and lightly salted dry-roasted peanuts. Once melted, mini marshmallows are folded in and the mixture is scooped to cool into sweet, dense candy clusters with a creamy and crunchy texture. Optional sprinkles add color and extra texture.

Description

The recipe for Rocky Road Peanut Clusters melts white almond bark and two types of chocolate chips over low heat in a crockpot layered with dry roasted peanuts. Stirring during cooking ensures an even, smooth chocolate mixture. Once melted, mini marshmallows are stirred in briefly to coat without melting, preserving their soft, chewy texture.

The clusters are portioned onto wax paper-lined trays and optionally topped with sprinkles before setting for 30 to 60 minutes. The final candy combines creamy chocolate, crunchy peanuts, and soft marshmallows, creating a rich and textured treat.

Storing the candy in an airtight container keeps it fresh. The slow cooker melting method allows gentle, hands-off heating that prevents scorching compared to stovetop methods.

Ingredients

Servings
  • 1 lb peanut about 4 cups, lightly salted, dry roasted
  • 2 lbs vanilla almond bark broken into pieces
  • 12 oz semisweet chocolate chips
  • 4 oz dark chocolate I like to use Ghirardelli 60%, bar, broken into pieces
  • 10 oz mini marshmallows about 4-5 cups
  • Sprinkles optional

Instructions

  1. Layer peanuts evenly into the bottom of your crockpot. Add almond bark, chocolate chips, and dark chocolate bar on top.
  2. Cover with lid and cook on low heat for one hour.
  3. Remove lid and stir well. If all of the chocolate isn't completely melted, continue to cook uncovered on low heat, stirring occasionally, for another 15-30 minutes (or as long as is needed until chocolate is melted).
  4. Turn off heat and allow to cool for 5 minutes. Add mini marshmallows and stir briefly, just until marshmallows are coated in chocolate and combined (if you stir too much you will melt your marshmallows, you want them to pretty much maintain their shape).
  5. Immediately use a 1 ½ Tablespoon sized cookie scoop (or two large spoons) and scoop candy by heaping 1 ½ Tablespoon onto a wax paper lined cookie sheet (you'll need several, this makes a lot of candy).
  6. Top with sprinkles, if desired, then allow candy to set before enjoying (about 30-60 minutes).
  7. Store candy in an airtight container at room temperature.
