Description
This cookie recipe uses store-bought devil's food cake mix combined with eggs and neutral oil to create a chocolate dough. Chilling the dough firms it for easier handling. Cookies are shaped by placing a Rolo candy inside flattened dough, then sealing and baking briefly. The candy melts inside, creating a chewy filling amid a soft cookie shell. The final cookies are tender, rich, and have a caramel center.

Ingredients
- 1 box devil's food cake mix
- 2 large egg
- 1/3 cup neutral cooking oil generic cooking oil
- 18 Rolo candies unwrapped
Instructions
- Preheat oven to 350 degrees. Line a cookie sheet with parchment.
- Mix together the first three ingredients until well combined.
- Chill dough for 30 minutes in the refrigerator.
- Spray your hands with non-stick cooking spray and then use a medium cookie scoop to scoop out dough. Roll the dough into a ball. Smash it flat in your hand and place a Rolo in the center. Close the dough around the Rolo. Repeat until all of the dough is used.
- Bake for about 9 minutes. Sprinkle with powdered sugar.
- Serve warm or at room temperature.
