  • 3/4 cup butter melted and cooled
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 2 teaspoons corn starch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 20 Rolo candies unwrapped

Instructions

  1. Add the melted butter and brown sugar to a mixing bowl and mix until well combined. 
  2. Stir in the egg and vanilla and mix well.
  3. Mix in the flour, corn starch, baking soda, and salt until well combined. Stir in the chocolate chips by hand.
  4. Scoop 1 tablespoon of dough into 10 greased muffin wells each. Flatten with your fingers to cover the bottom of the muffin tin.
  5. Place two Rolo candies on top of the cookie dough.  Top each with another tablespoon of cookie dough.
  6. Bake at 350 degrees for 10 minutes.
  7. Let cool 5-10 minutes before carefully removing from the muffin tin. 
  8. Store in an airtight container for up to 5 days.
