Description
The dough is made by creaming softened butter with sugars, then adding eggs and vanilla for flavor and structure. Dry ingredients including flour, baking soda, and salt are mixed in before folding in chocolate chips. Dough balls are formed and each encases a Rolo candy completely to avoid caramel spilling during baking.
Baking at 375°F for around 9-11 minutes produces cookies with golden edges and a soft center. Letting them cool on the baking sheet before transferring helps set their shape. The combination of the chocolate chips and the caramel Rolo center gives layered sweetness and texture to every bite.
For smaller versions, use mini Rolos and smaller dough portions. Unwrapped Rolos save prep time. Cookies are best enjoyed within five days stored in an airtight container.
Ingredients
- 1 ⅓ cups butter (softened)
- 1 cup sugar
- 1 cup brown sugar
- 2 egg
- 2 tsp vanilla
- 1 tsp baking soda
- ¼ tsp salt
- 3 cups all-purpose flour
- 2 cups chocolate chips semi-sweet
- 36 Rolo candies
Instructions
- Preheat oven to 375°F and line baking sheet with parchment paper.
- Combine butter, sugar, and brown sugar and cream together.
- Add eggs and vanilla then beat until light and fluffy, about 2 minutes.
- Combine baking soda, salt, and flour in a small bowl. Add mixture to wet ingredients and mix well.
- Fold in chocolate chips.
- Scoop out a ball of cookie dough using a medium scoop and make a balls of dough. Press a Rolo into the center of each ball, making sure to cover the Rolo completely with dough before placing on baking sheet.
- Bake for 9 - 11 minutes. Let cool on baking sheet for 10 minutes before transferring to baking rack to cool completely.
Notes
- Ensure each Rolo candy is fully covered by dough to prevent caramel from oozing out during baking.
- Buying unwrapped Rolos can save time when preparing the cookie filling.
- Store leftover cookies in an airtight container for up to five days to preserve freshness.
- To make mini Rolo cookies, use smaller scoops of dough and miniature Rolo candies for bite-sized treats.
