Description
This recipe starts with placing single square pretzels on a baking sheet and topping each with an unwrapped Rolo candy, baked briefly at a low temperature to soften the chocolates without melting completely. A second pretzel is pressed on top to create a sandwich structure. The sandwiches then chill until fully firm.
Meanwhile, white candy melts are melted gently using a double boiler or microwave, then the pretzel sandwiches are half-dipped into the melted candy and set on the baking sheet. If desired, colorful holiday sprinkles are added immediately after dipping. A final chill sets the coating until firm.
The result is a bite-sized candy with a crunchy pretzel exterior, a warm and chewy caramel-chocolate center, and a sweet white chocolate coating that can be customized with sprinkles. These candies are made in batches of 50 but can be scaled up or down. They store well refrigerated for up to a month and freeze nicely if individually frozen before bagging.
Ingredients
- 100 pretzels square shaped
- 1 (12 ounce) bag Rolo candies unwrapped (about 50 pieces, see note 1)
- 1 (12 ounce) bag Candy Melts see note 2, bright white
- 1/4 cup holiday sprinkles optional
Instructions
- Preheat oven to 250 degrees. Line a baking sheet with parchment paper or foil for easy cleanup.
- Arrange 50 pretzels on prepared baking sheet. Top each pretzel with a Rolo. Bake until the Rolos are shiny and have softened slightly, about 3 minutes.
- Remove from oven and immediately top each with a second pretzel, pushing down slightly to form a sandwich. Chill until completely cool, at least 30 minutes.
- Meanwhile, set candy melts in a bowl over a pot of simmering water (double-boiler method) or melt in the microwave at 50% power in 30-second increments. Stir until smooth.
- Dip half of each pretzel in melted chocolate and lay on baking sheet. Immediately top with sprinkles. Chill until completely cool, at least 30 minutes.
Notes
- You can substitute Rolos with other small meltable chocolates like Hershey's Kisses or Hugs for different flavors.
- Bright white candy melts provide contrast but can be replaced with other chocolate if preferred.
- This recipe yields 50 pretzel sandwiches; quantities can be halved or doubled to adjust the yield.
- Store leftover candies covered in the refrigerator for up to one month.
