Root Beer Popsicles

These root beer popsicles are made in two layers: a vanilla ice cream base and a root beer mixture blended with more vanilla ice cream. They freeze into a creamy, slightly fizzy treat combining sweet vanilla and root beer flavors, ideal for cooling off on warm days.

Description

Root Beer Popsicles consist of an initial vanilla ice cream layer poured into molds and frozen until firm. The root beer soda is then mixed slowly with softened vanilla ice cream to minimize foam, creating a smooth root beer ice cream blend. This mixture is added atop the solid vanilla layer in the molds before freezing again until solid.

The result is a popsicle with a creamy vanilla start followed by a sweet, slightly carbonated root beer layer. The combination offers a nostalgic flavor reminiscent of root beer floats but in a frozen form with distinct layered presentation.

For easy removal, the popsicles should be left a few minutes at room temperature or briefly rinsed with warm water. This helps loosen them from the molds without losing shape or texture.

Vanilla ice cream layer:

  • ½ C vanilla ice cream softened, 125ml

Root beer layer:

  • 1 can root beer 355ml
  • C vanilla ice cream softened, 160ml

Instructions

Make the vanilla layer:

  1. Soften the vanilla ice cream at room temperature (or in the microwave).
  2. Pour 1 tablespoon (15ml) into each popsicle mold.
  3. Freeze for 2-3 hours, until firm.

Prepare root beer layer:

  1. In the meantime, open the can or bottle of root beer soda and let it sit in the refrigerator.
  2. After a few hours, pour root beer into a large measuring cup.
  3. Whisk in a little (about 2 Tbsp) vanilla ice cream into the root beer, and remove excess foam and bubbles with a spoon.
  4. Continue to stir in the ice cream, a little bit at a time.
  5. Once all the vanilla ice cream has been incorporated into the root beer, remove the popsicle molds from the freezer and stir and pour the root beer mixture into the molds.
  6. Add the popsicle mold cover and insert the popsicle sticks.
  7. Freeze for 6-8 hours, until solid.
  8. Once fully frozen, remove the popsicles from the molds and enjoy immediately.

Notes

  • Allow popsicles to soften briefly at room temperature before unmolding to avoid breakage.
  • Running molds under warm water can help release popsicles without damaging their shape.
