Rosemary Roasted Carrots

Rosemary Roasted Carrots bring tender roasted carrots seasoned with fresh rosemary, salt, and pepper, finished with a sticky maple syrup glaze. The carrots are cut evenly to ensure consistent roasting, resulting in a tender inside and slightly charred edges that enhance their natural sweetness. This preparation balances herbaceous notes with a touch of sweetness, making a flavorful side dish.

Description

The recipe starts by cutting peeled carrots into uniform pieces for even cooking. Fresh rosemary leaves are combined with olive oil to infuse the carrots with a woodsy aroma and flavor. The carrots are tossed with this mixture along with salt and pepper before roasting in a hot oven until tender and lightly caramelized on the edges. A final drizzle of maple syrup creates a glossy, sweet layer that slightly chars on a brief return to the oven, adding complexity and sticky texture. The roasted carrots are served immediately and can be garnished with extra rosemary to highlight their herbal notes.
