Rosemary Roasted Potatoes

Rosemary Roasted Potatoes use cubed potatoes tossed with olive oil, minced garlic, dried rosemary, salt, and freshly cracked pepper, then roasted at 400°F until golden and tender. The herbs and garlic infuse the potatoes during roasting, creating a fragrant, savory side with crisp edges and tender centers. Fresh parsley adds color and brightness when sprinkled before serving.

Description

This recipe starts by cutting washed potatoes into even cubes, ensuring uniform cooking. They are coated evenly with olive oil, minced garlic, dried rosemary, salt, and cracked black pepper, which helps infuse flavor while allowing the natural potato taste to shine. Roasting is performed on a single layer on a baking sheet for 30 minutes, stirred halfway through to promote even browning. Additional roasting time can be added to deepen color and crispiness as preferred.

The result is tender potatoes with a crisp, flavorful exterior and aromatic notes from rosemary and garlic. Finishing with a sprinkle of fresh chopped parsley enhances both taste and presentation. This dish pairs well with roasted meats or stands alone as a hearty side.

The recipe notes flexibility in potato variety, advising to maintain even-sized pieces for consistent roasting.

Ingredients

Servings
  • 1.5 lbs. potato $2.99
  • 1 Tbsp olive oil $0.16
  • 2 cloves garlic $0.16, minced
  • 1 tsp rosemary $0.10, dried
  • 1/2 tsp salt $0.02
  • black pepper $0.03, freshly cracked
  • 1 handful parsley $0.12, chopped; optional

Instructions

  1. Preheat the oven to 400ºF. Wash your potatoes well, then cut them into 3/4-inch cubes or pieces.
  2. Place the potatoes in a large bowl and add the olive oil, minced garlic, dried rosemary, salt, and some freshly cracked pepper (about 15 cranks of a pepper mill). Toss the potatoes until they are evenly coated in oil and spices.
  3. Spread the potatoes out over a baking sheet so that they are in a single layer. Transfer the potatoes to the oven and roast for 15 minutes, then stir and roast for an additional 15 minutes.
  4. After 30 minutes total roasting time, stir once again and if additional browning is desired, roast for an additional 5-10 minutes. Serve with a handful of fresh, chopped parsley sprinkled over top, if desired.

Notes

  • Any variety of potato can be used, but cut all pieces evenly to ensure even cooking.
  • Fresh parsley added after roasting provides a fresh flavor contrast and visual appeal.
