Rotisserie Chicken

This rotisserie chicken features a butterflied whole bird seasoned simply with olive oil, kosher salt, garlic powder, onion powder, paprika, ground rosemary, and a touch of cayenne pepper. Roasting it on a rotisserie spit over indirect heat with wood smoke gives the meat an even cook and a flavorful, crispy skin. The slow rotation helps baste the chicken in its own juices, resulting in tender, juicy meat and a nicely browned exterior.

Description

The Rotisserie Chicken recipe prepares a whole butterflied chicken rubbed with olive oil and a blend of savory spices including garlic and onion powder, paprika, rosemary, and cayenne pepper for subtle heat. Cooking on a rotisserie spit over a grill heated to around 300°F with added cherry wood smoke allows for even roasting, crisp skin, and juicy meat throughout. The slow turning exposes the bird evenly to heat and smoke, producing tender, flavorful results. This preparation highlights the balance of simple seasoning and the rotisserie technique to enhance the chicken's natural flavors through gentle, consistent cooking.

The finished chicken offers a crispy, well-seasoned crust with a tender interior that can be served sliced for meals or used in sandwiches. The smoky aroma adds complexity without overpowering the seasoning blend.
