Ingredients
- 1 onion finely diced
- 2 celery finely diced, spears
- 2 carrot peeled and diced
- 1 red pepper finely diced
- 2 garlic minced, cloves
- 1 cup peas frozen
- 3 cups chicken approximately 1 medium chicken, shredded rotisserie
- 4 cups rice cold, cooked
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp lemon juice
- spring onion chopped
Instructions
- Heat a large wok over high heat.
- Fry the onion, celery, carrot and red pepper until the vegetables start to soften. Approximately 5-7 minutes.
- Add the garlic and cook for a few seconds before adding the peas, chicken and rice.
- Stir fry for another minute or two.
- Combine the soy suace, oyster sauce, sesame oil and lemon juice. Pour over the rice then stir fry for another 1-2 minutes.
- Taste and adjust seasoning.
- Serve topped with chopped spring onions.
