Rotisserie chicken fried rice

This Rotisserie Chicken Fried Rice combines shredded rotisserie chicken with a mix of diced vegetables, cold cooked rice, and a savory sauce blend that includes soy sauce, oyster sauce, sesame oil, and lemon juice. The stir-fry method softens the vegetables while leaving the rice grains distinct and flavorful. Topped with fresh spring onions, it offers a colorful and hearty dish suitable as a quick main or side using leftover chicken.

Description

Rotisserie Chicken Fried Rice uses pre-cooked shredded chicken blended into a stir-fry of onion, celery, carrot, red pepper, garlic, and peas. Cooking the vegetables until tender while keeping some texture, then adding the rice allows the dish to come together quickly without sogginess. The soy and oyster sauce mixture adds salty, umami notes balanced by the nutty sesame oil and a splash of lemon juice for brightness. Finishing with chopped spring onions adds fresh color and a mild onion bite. This recipe is a practical way to transform rotisserie chicken into a satisfying rice dish with a balance of textures and clean flavors.

The texture is tender with slight bite from the vegetables and individual grains of rice. The method of high heat stir-frying combines flavors swiftly without overcooking. It can be served directly as a main meal or alongside other dishes.
