Description

Royal Icing consists of raw egg whites beaten until frothy, then combined slowly with confectioners’ sugar, vanilla extract, and lemon juice. The mixture is whipped to stiff peaks with a shiny, firm texture suitable for piping detailed decorations or flooding cookie surfaces. Lemon juice helps stabilize the icing and adds a slight tang.

Gel food coloring is preferred for tinting the icing as it does not affect consistency. Once colored and piped, the icing sets rapidly to a hard finish, making it ideal for intricate cookie decorations or covering cakes with a smooth surface.

Storing royal icing properly is crucial as it dries out quickly. Use piping bags immediately or store covered in plastic wrap until use.

  • 3 egg white
  • 1 pound confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Add the egg whites to the bowl of a stand mixer or large mixing bowl, and beat on medium-low speed until frothy, about 1 minute.
  2. Next, reduce the speed to low, and slowly add in the confectioners’ sugar, vanilla, and lemon juice.
  3. Beat the mixture until fully incorporated, and after that increase the speed to medium-high and beat until stiff peaks form. The mixture should be stiff with shiny peaks.
  4. If you want to color your icing, it is better to use gel food coloring. First, divide the icing among small bowls, and stir in gel food coloring. Transfer to piping bags and decorate cookies.
  5. Either store the icing in piping bags or add it to a bowl and cover it with plastic wrap as it dries out very quickly.
