  • 3-4 tablespoons vegetable oil
  • 4 cloves garlic (sliced)
  • 225 g soybean sprouts (8 ounces, trimmed)
  • 300 g tatsoi (or Shanghai bok choy, 10 ounces, leaves separated and washed thoroughly)
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon white pepper

Instructions

  1. Heat 3-4 tablespoons vegetable oil in a wok over high heat, and cook garlic for a few seconds. Add the soybean sprouts, and stir-fry for 30 seconds.
  2. Add the leafy greens (tatsoi or Shanghai bok choy), and stir-fry for 1 minute. Add the oyster sauce, salt, sugar, sesame oil, and white pepper. Stir-fry everything together for another 1 to 2 minutes, until vegetables are wilted to your liking. Serve immediately.
