Russian Liver Cake Recipe

Russian Liver Cake is a savory layered dish made from thin crepe-like pancakes of blended chicken liver mixed with sour cream, egg, flour, and seasonings. These layers are alternated with a creamy garlic, dill, and mayonnaise spread, then chilled until firm. The cake presents a rich, smooth texture with herbaceous and tangy notes popular as an appetizer or festive dish.

Description

This Russian Liver Cake recipe uses finely blended chicken liver combined with sour cream, egg, flour, salt, and pepper to form a thin batter. The batter is cooked as delicate crepe-like layers until golden brown on both sides, producing tender, savory layers. Separately, a creamy mixture of mayonnaise, freshly pressed garlic, and chopped fresh dill is prepared to layer between the crepes.

Assembly involves stacking the liver crepes alternately with garlic-dill mayonnaise, creating a multilayered savory cake with a balance of earthy liver flavor and bright herbaceous creaminess. Chilling the assembled cake for at least an hour before serving allows the layers to set and flavors to meld.

The liver cake is typically served sliced, making it suitable as an appetizer or party dish with a unique texture combining soft crepe layers and creamy filling.
