Saffron Rice

Saffron Rice is a fragrant dish where basmati rice cooks with butter, sautéed onion, garlic, and saffron threads, immersed in chicken broth for moisture. The result is a soft, aromatic rice tinted by saffron and garnished with fresh parsley for brightness.

Description

This recipe starts by melting butter in a skillet and softening diced onions, followed by cooking minced garlic and saffron threads briefly to release their aromas. Adding basmati rice allows the grains to toast lightly before simmering in chicken broth seasoned with salt and black pepper.

Covered and simmered over medium-low heat, the rice absorbs the broth and cooks until tender and liquid-free. The saffron imparts a subtle floral and earthy aroma with a golden hue, while the onions and garlic contribute savory complexity.

After cooking, the rice is fluffed and mixed with chopped parsley, adding a fresh, herbal note. This dish pairs well as a side to various protein dishes or can stand as a fragrant base in a meal.

Ingredients

Servings
  • 2 tablespoons butter
  • 1/2 cup yellow onion diced
  • 1/2 teaspoon garlic minced
  • 1 teaspoon saffron threads
  • 1 cup basmati rice
  • 1 1/2 cups chicken broth
  • parsley chopped, to taste
  • salt to taste
  • black pepper to taste

Instructions

  1. Melt the butter in a large skillet with a lid. Add the onions and cook until soft. Add the garlic and saffron threads. Cook for 1 minute.
  2. Add the rice and stir.
  3. Add the chicken broth, salt, and pepper.
  4. Bring to a boil and then cover, reduce heat to medium low, and cook for 17 minutes. You'll know it is done when the liquid is gone from the pot and the rice is soft.
  5. Fluff the rice with a fork, stir in the parsley, and serve.

Notes

  • You can substitute butter with ghee, coconut oil, or vegetable oil depending on preference.
  • Chicken broth can be swapped for vegetable stock for a vegetarian option.
  • Look for affordable saffron sources like Trader Joe's to keep costs reasonable.
