Salisbury Steak

Salisbury Steak features oval-shaped beef patties blended with breadcrumbs, egg, and seasoning to hold together when cooked. They're pan-fried in a mix of olive oil and butter until cooked through, then simmered in a rich onion mushroom gravy made with beef broth, tomato paste, soy and Worcestershire sauces, thickened with cornstarch. This hearty dish combines tender meat with caramelized onions and optional mushrooms, offering savory flavors and a satisfying texture. It provides a comforting meal best served hot with the gravy spooned over the patties.

Description

The Salisbury Steak recipe is focused on shaping ground beef into oval patties combined with breadcrumbs and egg to maintain their structure during cooking. Once formed, the patties are pan-fried to a brown crust and cooked through. The onion mushroom gravy, prepared in the same skillet, uses caramelized onions and optional cremini mushrooms, enriched by beef broth, tomato paste, soy, and Worcestershire sauces to develop a deep, savory taste. Cornstarch dissolves into the mixture to thicken the gravy, which is then returned to the patties to warm through and meld flavors.

The dish offers a well-rounded balance of browned meat and rich, flavorful gravy with tender onions and mushrooms. It can be served on its own or alongside mashed potatoes or vegetables to complement the robust flavor. Reheating is convenient since the patties are fully cooked before adding the gravy, preventing overcooking during reheats.

To keep the patties intact, it is important to adjust the number of eggs and breadcrumbs proportionally if increasing the meat quantity. Avoid over-mixing the meat mixture, as this can toughen the patties. Leftovers should be stored airtight in the refrigerator and can be reheated in short intervals in the microwave until warmed.

Ingredients

Servings

Salisbury Steak

  • 2 pound ground beef extra lean
  • ½ cup breadcrumbs
  • 1 large egg
  • ½ teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Onion Mushroom Gravy

  • 1 large onion halved and sliced thinly
  • 8 ounce cremini mushrooms optional
  • 2 cups beef broth low sodium
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoon cornstarch
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions

  1. In a large bowl, combine the beef, breadcrumbs, egg, Worcestershire sauce, salt and pepper, using your clean hands. Divide into 6 equal pieces and form each one into oval patties.
  2. In a large skillet add the olive oil and butter and heat until melted over medium-high heat. Add the meat patties and fry on both sides until no longer pink in the middle, about 5 minutes per side. Transfer the patties to a plate.
  3. Reduce the heat to medium and add the sliced onions and cook until softened, about 3 to 5 minutes.
  4. Add the mushrooms, if using, and cook for a few more minutes until the onions are golden brown, another 3 minutes.
  5. Add the beef broth, tomato paste, soy sauce, and Worcestershire sauce and stir. In a small bowl whisk the cornstarch with a bit of water or beef broth and add to the skillet. Whisk until the sauce thickens, for about 2 minutes.
  6. Add the meat back to the pan and spoon gravy over the top. Cook for another minute until the meat patties warm through.
  7. Garnish with parsley and serve over mashed potatoes.

Notes

  • Adjust egg and breadcrumb amounts if you increase the meat to ensure patties hold together well.
  • Mix the ground beef gently to avoid toughening the patties.
  • Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
  • Reheat the Salisbury steaks in short microwave bursts of about 20 seconds until hot.
