  • 240 g salmon skinned and cut into chunks, fillet
  • 2 garlic for the burgers, clove
  • 1 garlic for the basil sauce, cloves
  • 1 talk lemongrass
  • 4 shallot
  • 30 g ginger fresh
  • 1 green chili small
  • 100 g whole wheat bread blended into breadcrumbs
  • 1 lime juice only; for the burger
  • 1 lime juice only; for the basil sauce
  • 4 tablespoon Greek yogurt 0% fat free
  • 4 tablespoon basil fresh
  • 1 tablespoon olive oil

Optional to serve:

  • 2 burger buns
  • coleslaw
  • lettuce

Instructions

  1. Put 100 g Whole wheat bread into a food processor and blend until breadcrumbs.
  2. Put 240 g Salmon fillet, 2 Garlic clove, 1 stalk Lemongrass, 4 Shallots, 30 g Fresh ginger, 1 Green chillies and juice 1 Lime into a food processor and blend until a paste.
  3. Take out and form into 2 burger patties.
  4. Heat 1 tablespoon Olive oil in a pan and cook the burgers for around 4-5 minutes each side.
  5. Meanwhile, put4 tablespoon 0% Fat Free Greek yogurt, 1 Garlic cloves, juice of 1 Lime and 4 tablespoon Fresh basil into a food processor (clean after using it for the salmon) and blend to make a sauce.
  6. Serve in 2 Burger buns (optional) with sauce on top of the salmon burger with Coleslaw and Lettuce (optional).

Notes

  • Use Panko breadcrumbs instead of whole wheat breadcrumbs for a crispier burger crust.
  • Chill the formed patties in the refrigerator for at least 30 minutes; this helps them hold together while cooking.
  • Ensure the pan and oil are hot before adding patties to achieve a good sear and prevent sticking.
  • For flavor variations, substitute Thai seasonings with lemon juice and fresh herbs or try a Mexican spice blend.
