Salmon Florentine (25 Minutes)

Ingredients
- 2 lbs salmon 4-5 salmon filets
- 2 tsp garlic parsley salt
- 2 tbsp olive oil or unsalted butter
- 8 oz baby bella mushrooms sliced
- 2 garlic cloves minced
- 2 cups heavy cream
- 1/2 cup Parmesan Cheese grated
- 4 oz baby spinach fresh
- 1/2 tsp salt adjust to preference

Instructions
- Pat the salmon dry and slice it into 4-5 equal filets. Season with garlic parsley salt.
- Add the olive oil to a large skillet and heat it over medium-high heat. Sear 3-6 minutes on each side. Transfer the cooked salmon to a separate plate.
- In the same skillet, add the mushrooms (adding more olive oil or butter if needed). Cook until they are soft and brown.
- Add the minced garlic and cook until fragrant.
- Pour in the heavy cream, add the cheese, and cook until the sauce slightly thickens.
- Add the spinach and cook just until it wilts, about 3 minutes. Season with salt to taste.
- Place the salmon filets back into the sauce and top the salmon with the sauce. Serve warm and enjoy!
