  • 1 lb. salmon skinless, filets
  • 1 Tbsp sweet paprika each
  • 1 Tbsp garlic powder
  • 1 Tbsp brown sugar
  • 1 tsp salt each
  • 1 tsp black pepper each
  • 1/4 tsp red pepper flakes
  • 2 cups sticky rice cooked, 280g
  • 1 cup carrot matchstick or shredded, 80g
  • 2 cucumber sliced - or 1 cup regular cucumber, diced, Persian
  • 1 nori thinly sliced, roasted seaweed snack, pack
  • furikake Japanese rice seasoning
  • avocado thinly sliced, optional for serving

Spicy Mayo:

  • 1/2 cup mayonnaise light, 120g
  • 1.5 tsp sriracha more to taste

Instructions

Spicy Mayo:

  1. Whisk together the mayo and sriracha in a bowl. Store in the fridge until ready to use.

Salmon:

  1. Preheat the air fryer to 400 degrees F. Whisk the seasonings together in a small bowl (paprika, garlic powder, brown sugar, salt, pepper and red pepper flakes).
  2. Pat the salmon dry with a paper towel and cut into 1-inch cubes. Add to the bowl with the seasoning mix and toss to evenly coat. Spray air fryer basket with cooking spray. Add the salmon bites to the basket in an even layer and cook for 5-7 minutes, tossing halfway through, or until the salmon is no longer pink.

Build Sushi Bowls:

  1. Makes 4. To each bowl, add 1/2 cup of the cooked sushi rice and 1/4 of the salmon bites (103g). Then top with 1/4 cup matchstick carrots, sliced cucumber, a few pieces of thinly sliced nori and a big pinch of Furikake. Drizzle with the spicy mayo and enjoy!

  • Use fully thawed salmon and pat dry to help the seasoning adhere and promote even cooking.
  • Cut salmon into uniform 1-inch cubes to cook evenly through and avoid dryness.
  • Shake or toss the salmon bites halfway through air frying to ensure they cook evenly on all sides.
