Salmon Tacos with Pineapple Salsa

Salmon Tacos are made with a few simple ingredients that fulfill your craving for Mexican flavor.

Ingredients
- 4 salmon filets cooked, see notes
- 12 small flour tortillas warmed, 4 to 6-inch
- 2 cups finely diced pineapple
- 1 lime juiced
- 1 small red bell pepper finely diced
- 1 small Jalapeño finely diced
- ¼ cup diced red onion
- ¼ cup chopped fresh cilantro
- kosher salt to taste
- black pepper to taste
Instructions
- Chunk up salmon fillets and add an equal amount of salmon onto the middle of each flour tortilla.
- In a medium-sized mixing bowl stir together pineapple, lime juice, red bell pepper, jalapeno pepper, red onion, and cilantro. Taste and season with the desired amount of kosher salt and black pepper. If the salsa seems dry add in a little more lime juice.
- Top each taco with the fresh pineapple salsa.
Notes
- Any cooked salmon will work for this recipe. Favorites are grilled salmon, teriyaki salmon, or baked salmon.
- To bake salmon filets, brush salmon with olive oil. Combine the rub below and sprinkle over salmon. (Cajun seasoning or blackened seasoning are great in this recipe as well).
- Bake at 400°F for 10-12 minutes or until cooked through and flaky.
- For the best flavor try grilling on cedar planks.
- Depending on the size of the salmon fillets you might want to use fewer tortillas.
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp each salt & pepper
- 1 teaspoon oregano
