Salmon Tacos with Pineapple Salsa
Description
This recipe uses cooked salmon fillets, broken into chunks, served on small warmed flour tortillas. The pineapple salsa mixes finely diced pineapple with lime juice, red bell pepper, jalapeño, red onion, and chopped cilantro. Kosher salt and black pepper season the salsa, and additional lime juice can be added to adjust moisture and tang.
The contrast between the tender, flaky salmon and the crisp, sweet, and slightly spicy salsa provides a layered flavor experience. The small tortillas hold modest portions, making them easy to assemble and eat as street-style tacos.
These tacos are excellent served for casual dinners or gatherings. The recipe allows for flexibility in salmon preparation—grilled, baked, or teriyaki styles—as long as the fish is cooked through and flaky. The salsa can be adjusted for heat and acidity to personal taste.
The included seasoning mix for baking salmon enhances flavor with a blend of chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper. For best results, grilling on cedar planks can add smokiness. The number of tortillas can be adjusted depending on salmon portion size.
Ingredients
- 4 salmon cooked, see notes, filets
- 12 small flour tortillas warmed, 4 to 6-inch
- 2 cups pineapple finely diced
- 1 lime juiced
- 1 small red bell pepper finely diced
- 1 small jalapeño finely diced
- ¼ cup red onion diced
- ¼ cup cilantro chopped, fresh
- kosher salt to taste
- black pepper to taste
Instructions
- Chunk up salmon fillets and add an equal amount of salmon onto the middle of each flour tortilla.
- In a medium-sized mixing bowl stir together pineapple, lime juice, red bell pepper, jalapeno pepper, red onion, and cilantro. Taste and season with the desired amount of kosher salt and black pepper. If the salsa seems dry add in a little more lime juice.
- Top each taco with the fresh pineapple salsa.
Notes
- Any cooked salmon can be used: grilled, baked, or teriyaki-flavored.
- To bake salmon, brush with olive oil and sprinkle the recommended spice rub before baking at 400°F for 10-12 minutes until flaky.
- Grilling salmon on cedar planks adds smoky aroma and flavor.
- Adjust the number of tortillas depending on the size of the salmon fillets to ensure balanced portions.
