Salmoriglio Sauce with Shrimp

A simple (super simple) Sicillian dressing for seafood that's just bursting with zingy summer flavours.

Ingredients

Servings
  • 1 lemon (zest and juice)
  • 1/2 cup extra virgin olive oil
  • 2 tbsp oregano (finely chopped)
  • 2 tbsp celery leaves (finely chopped)
  • 1 tbsp parsley (finely chopped)
  • 1 garlic clove (minced)
  • 800 g cooked shrimp (shells on or off, chilled)
  • salt & pepper

Instructions

  1. Whisk the olive oil and lemon juice together until creamy
  2. Stir in the minced lemon zest, garlic, garlic, oregano, celery leaves and parsley.
  3. Whisk in the water and season with salt & pepper.
  4. Serve a little sauce drizzled over the chilled cooked shrimp on a platter and a small bowl with extra sauce for dipping.
