Salsa Chicken
Description
Salsa Chicken features boneless skinless chicken breasts seasoned with taco spices and baked in salsa, which both flavors and keeps the chicken moist. After baking, shredded cheddar cheese is melted on top for a savory, slightly sharp contrast. The dish is garnished with a dollop of sour cream and sliced green onions, which add creaminess and a mild onion bite to each serving.
The chicken breasts are baked in a preheated oven, first layered over a salsa base and then covered with more salsa and seasoning. The finishing step with cheese melting under the heat brings together the textures of tender chicken, flavorful sauce, and creamy topping.
This dish can be served alongside rice, beans, or wrapped in warm tortillas. It's straightforward to prepare and suitable for weeknight dinners when a flavorful protein is desired without complicated steps.
The recipe notes suggest using chicken pieces of similar size for even cooking and shredding your own cheddar cheese to achieve better melting compared to pre-shredded varieties. Chicken thighs may be used as an alternative for a different texture and flavor.
Ingredients
- 4 chicken breast boneless skinless
- 1 1/2 tablespoons taco seasoning
- 1 1/2 cups salsa
- 1 cup cheddar cheese shredded
- 1/4 cup sour cream
- 2 tablespoons green onions sliced
- cooking spray
Instructions
- Preheat the oven to 375 degrees F. Coat a 2 quart baking dish with cooking spray.
- Spread 1/2 cup of salsa in an even layer in the bottom of the dish. Place the chicken breasts on top.
- Sprinkle the taco seasoning evenly over the chicken.
- Pour the remaining salsa over the chicken.
- Bake for 30-35 minutes, or until chicken is cooked through.
- Remove the dish from the oven. Sprinkle the cheese over the chicken.
- Return the pan to the oven and bake for an additional 2-3 minutes or until cheese is melted.
- Top each chicken breast with a dollop of sour cream and sprinkling of green onions, then serve.
Notes
- Choose chicken breasts or thighs of similar size and thickness to ensure even cooking.
- Shred your own cheddar cheese instead of using pre-shredded to achieve better melting.
- This dish pairs well with rice, beans, or tortillas for serving.
