Salt and Pepper Shrimp

Salt and Pepper Shrimp features shrimp coated in a crispy batter made from flour, cornstarch, baking powder, and egg white, deep-fried until golden. The fried shrimp is then quickly stir-fried with green onions, chili, salt, and white pepper, creating a crunchy texture with a lightly spicy and savory seasoning. This method provides both a crisp coating and fresh aromatics in the finished dish.

Description

The recipe begins with shrimp marinated briefly with salt and white pepper. A batter of all-purpose flour, cornstarch, baking powder, egg white, and oil is mixed to create a light coating. The shrimp are dipped and deep-fried at 350°F (175°C) until light golden and crisp. Excess oil is drained by resting the shrimp on a wire rack or paper towels.

For finishing, green onions and chili slices are stir-fried briefly over high heat with a pinch of salt and white pepper before adding the crispy shrimp back in for a quick toss. This step infuses the dish with fresh onion and chili aroma, balancing the crunchy, lightly seasoned batter coating of the shrimp.

The taste is a combination of fried crispness with a subtle heat and the bright flavor of green onions. This dish is commonly served as an appetizer or part of a meal where the contrast of textures is appreciated.

  • ¼ teaspoon salt
  • ¼ teaspoon white pepper
  • neutral cooking oil for deep-frying, generic cooking oil

Frying Batter:

  • ½ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ teaspoon baking powder or baking soda
  • 1 egg white
  • ½ cup water
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 pinch salt

Stir-fry:

  • ½ tablespoon neutral cooking oil generic cooking oil
  • 1 tablespoon green onion scallion, chopped
  • ome red chili or green jalapeno, sliced
  • ½ teaspoon salt
  • ½ teaspoon white pepper

Instructions

  1. Rinse the shrimp under cold running water. Pat dry with paper towels, then marinate with salt and white pepper for about 15 minutes.
  2. Mix all the ingredients for the Frying Batter until well combined. Add the shrimp to the batter and stir to coat evenly.
  3. To deep-fry the shrimp, heat 2 to 3 inches (5 to 7.5 cm) of oil in a wok or stockpot to 350°F (175°C). Gently drop the shrimp into the oil and use a spatula to loosen them immediately, preventing them from clumping together.

  5. To stir-fry, heat the oil in a skillet over high heat. Add the chopped green onion and chili or jalapeño, stirring quickly for a few seconds. Add the fried shrimp to the skillet, followed by the salt and white pepper. Stir to combine all the ingredients well, then dish out and serve immediately.
