Salt and Pepper Tofu
Description
This dish uses regular firm tofu cut into small cubes, gently coated with potato starch which creates a crispy crust when fried slowly in vegetable oil. After the tofu becomes golden and crisp, most oil is removed leaving a small amount to fry aromatics: minced garlic, finely chopped scallion, and sliced fresh chili pepper, which imparts both fragrance and mild spiciness.
The tofu is then returned to the pan, sprinkled with salt and crushed Sichuan peppercorns. The result is a textured tofu dish with crispy edges, a tender center, and a peppery, aromatic seasoning that works well as a side dish or snack.
Ingredients
- 1 block firm tofu not super soft or firm, regular
- 3 tbsp. vegetable oil
- 1 scallion , finely chopped
- 2 garlic minced, cloves
- 3 Chili pepper cut into small circles, fresh
- 1/2 cup potato starch
Salt and pepper mix
- 1/2 tbsp. salt , or to taste
- 1 tbsp. Sichuan peppercorn
Instructions
- Cut tofu into small cubes and then coat with a thin layer of starch.
- Heat oil in wok and slowly fry the tofu blocks until crispy and slightly browned.
- Remove extra oil, only leave around 1 tablespoon of oil in pan, fry garlic, scallion and chili pepper until aromatic, turn off the fire. Return tofu and sprinkle salt and pepper. Toss well.
