Salt and Pepper Tofu

Salt and Pepper Tofu features cubes of firm tofu coated lightly in potato starch and fried until they develop a crispy, golden-brown exterior. These are tossed with stir-fried garlic, scallion, and fresh chili pepper, then seasoned with salt and Sichuan peppercorns for a flavorful, aromatic finish with a hint of heat and numbing spice.

Description

This dish uses regular firm tofu cut into small cubes, gently coated with potato starch which creates a crispy crust when fried slowly in vegetable oil. After the tofu becomes golden and crisp, most oil is removed leaving a small amount to fry aromatics: minced garlic, finely chopped scallion, and sliced fresh chili pepper, which imparts both fragrance and mild spiciness.

The tofu is then returned to the pan, sprinkled with salt and crushed Sichuan peppercorns. The result is a textured tofu dish with crispy edges, a tender center, and a peppery, aromatic seasoning that works well as a side dish or snack.
