- 5 cups kosher salt plus more to taste as needed
- 1 clove garlic
- Juice of 1 lemon about ¼ cup, or more to taste
- ⅓ cup Tahini
- pinch of cumin
- ½ cup olive oil
- 2 tablespoons fresh dill roughly chopped
- 2 tablespoons fresh mint roughly chopped
