Description

This Salted Caramel Apple Butter begins with peeled, cored, and chopped Gala apples cooked in apple juice with cinnamon, nutmeg, cloves, and allspice in a slow cooker. After an initial hour on high, the softened apples are pureed in batches to create a smooth texture before slow cooking again on low for several hours to reduce and concentrate the flavors.

Meanwhile, a caramel sauce is prepared by cooking butter, brown sugar, and maple syrup together until thick and bubbly, then whisking in sea salt and heavy cream off the heat. This sauce is gently folded into the apple butter, adding richness and a salted caramel taste to the spread.

The apple butter’s thick, buttery consistency and warm spice profile make it suitable for spreading on toast, stirring into oatmeal, or pairing with desserts. Slow cooking yields a deep, mellow flavor that highlights the apples' natural sweetness balanced by the caramel and spice elements.

Apple Butter Ingredients:

  • 3 lbs Gala apples peeled, cored and cut into 1-inch pieces
  • 1 C apple juice 100% unsweetened juice
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp allspice

Caramel Ingredients:

  • 1 TBSP butter unsalted
  • 1 TBSP brown sugar packed
  • 1 TBSP maple syrup
  • 1/4 tsp salt sea salt
  • 1 TBSP heavy cream
  • Slow cooker
  • food processor
  • heavy skillet
  • Whisk

Directions:

Apple Butter Directions:

  1. Prep the slow cooker with a coat of cooking spray.
  2. Add the apples, apple juice, and all of the spices in the slow cooker.
  3. Put on the lid.
  4. Turn on high cooking for an hour.
  5. Turn off the cooker.
  6. Add a third of the stewed apple mixture to the food processor or use a immersion blender. Continue to blend until the apples are smooth.
  7. Repeat the process until all of the stewed apples are blended.
  8. Pour the mixture back in the in the slow cooker.
  9. Turn the slow cooker on low and continue to cook for 6-8 hours. (The apple mixture will be about half of what it was.) Set aside.

Caramel Sauce Directions:

  1. Add the maple syrup, butter, and brown sugar in the skillet and cook on medium to high heat.
  2. Begin to whisk the butter, syrup, and brown sugar continuing until the mixture has thicken and is bubbly.
  3. Continue whisking while adding the salt and heavy cream. (1-2 minutes) Remove from the heat.
  4. Slowly stir in caramel sauce to the apple mixture.
  5. Set aside to allow to cool.
  6. Scoop into 4 oz lidded jars.
