Salted Caramel Apple Sheet Cake

The Salted Caramel Apple Sheet Cake features a moist cake studded with chopped Granny Smith apples and flavored with cinnamon, topped with a smooth powdered sugar glaze mixed with salted caramel sauce. This large-format cake balances sweet and tart notes and offers a tender crumb with a caramel finish. It suits gatherings or dessert trays where a rich apple dessert is welcome.

Description

This Salted Caramel Apple Sheet Cake starts with a batter containing all-purpose flour, cinnamon, baking soda, salt, granulated and brown sugars; melted butter is melted with water to create a hot mixture that is combined with the dry ingredients before adding buttermilk, eggs, vanilla, and chopped tart apples. Baking in a large jelly roll or sheet pan produces an evenly baked cake with a tender crumb.

The glaze is made by melting butter with milk, then mixing in sifted powdered sugar, vanilla, and salted caramel sauce to create a glossy, sweet, and slightly salty topping that complements the tartness of the apples and cinnamon spice. This cake offers a moist, flavorful dessert with texture from apples.

Serve this cake sliced into generous pieces, perfect with coffee or as a dessert after a meal. It works well for fall menus or when a crowd-pleasing apple dessert is desired.

Ingredients

Servings

For the cake:

  • 2 cups all-purpose flour 254 grams
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar 200 grams
  • 1 cup light brown sugar lightly packed, 200 grams
  • 2 unsalted butter
  • 1 cup water 236 grams
  • 1/2 cup buttermilk
  • 2 egg large
  • 1 teaspoon vanilla
  • 2 cups apple about 2 medium apples, 200 grams peeled and chopped, Granny Smith

For the glaze:

  • 1 unsalted butter stick, 113 grams
  • 1/4 cup milk
  • 3 cups powdered sugar sifted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup salted caramel sauce or store-bought, homemade

Instructions

Make the cake:

  1. Preheat the oven to 400°F. Butter or oil a 10-by-15-inch jellyroll pan or a 16-3/4 by 12-inch sheet pan.
  2. In a large bowl, combine the flour, cinnamon, baking soda, salt, granulated sugar, and brown sugar.
  3. In a medium saucepan over medium-high heat, combine the butter with 1 cup water and heat until the butter melts. Bring to a boil. Once the mixture is boiling, remove from heat and stir into the flour mixture. Let cool slightly then add add in the buttermilk, eggs, and vanilla. Gently stir in the apples.
  4. Pour the batter into the prepared pan, spreading evenly. Bake for 20 minutes if using a jelly roll pan, and about 17 minutes if using a 16.75 by 12-inch pan, or until a toothpick inserted comes out clean. Let cool in the pan on a wire rack for about 15 to 20 minutes.

Make the glaze:

  1. Meanwhile, combine the butter and milk in a large heat-proof bowl. Microwave until the butter is melted. Gradually stir in the powdered sugar until combined. Stir in the vanilla and caramel until combined. If the glaze is too thin, add more powdered sugar to thicken. Pour evenly over the slightly warm cake. Feel free to use less glaze for less sweetness. Let set for about 15 minutes before slicing and serving.
