Salted Caramel Brownie Cookies

Salted Caramel Brownie Cookies mix fudgy brownie dough into a cookie form with a surprise center of melted caramel and a sprinkle of sea salt. The dough remains soft and dense, while the caramel adds a gooey sweetness balanced by the salt. Baking seals the caramel inside, making for a warm, tactile bite. These cookies pair well with milk or as a decadent snack.

Description

Salted Caramel Brownie Cookies transform boxed brownie mix into handheld treats featuring a chewy, fudgy texture reminiscent of brownies but in cookie form. The recipe combines brownie mix with egg, vegetable oil, and water to form dough, which is formed into scoops. Each cookie encases a piece of caramel candy, sprinkled with sea salt, and covered with more dough before baking.

The heat of baking melts the caramel inside, creating a molten center while the exterior bakes into a slightly crisp-edged but tender cookie. The contrast of sweet caramel and salty flakes gives a complex sweet-savory profile that enhances the chocolate brownie dough. Letting the cookies rest on the baking sheet after removal avoids breaking and caramel leakage.

These cookies serve well warm alongside milk or chilled as a dessert or treat. Using a cookie scoop ensures evenly sized cookies and proper caramel distribution. The recipe is suited for those wanting a quick, indulgent cookie with a twist on classic brownie flavor.

Ingredients

Servings
  • 19.9 oz brownie mix (1 box) I used Betty Crocker's Fudgy Brownie mix
  • 1 egg
  • 1/3 cup vegetable oil + 1 tablespoon
  • 2 tablespoons water
  • 18 caramels
  • 1 teaspoon salt sea salt

Instructions

  1. Preheat oven to 350. Line a baking sheet with parchment or silicone baking mat and set aside.
  2. In a large bowl, stir the brownie mix, egg, oil, and water together until dough forms.
  3. Using a cookie scoop, scoop 18 cookies onto your prepared pan. Press down with your fingers.
  4. Place 1 unwrapped caramel on each cookie dough bottom and sprinkle with sea salt. Top with another scoop of cookie dough.
  5. Press down and seal the caramel in so it is completely encased in dough.
  6. Bake 10 minutes and remove from oven. Keep cookies on baking sheet another 5 minutes before removing to wax paper. DO NOT place on cooling rack. There's a possibility that the bottom cookie could tear, letting your warm caramel ooze out. Serve warm with milk.
