Salted Caramel Cashew No-Churn Ice Cream

Salted Caramel Cashew No-Churn Ice Cream is a rich creamy vanilla based ice cream with salted caramel ribbons and crunchy cashews made without an ice cream maker!

Ingredients

Servings
  • 1 cup heavy whipping cream
  • ½ sweetened condensed milk about 7 oz, 14 oz can
  • ¼ cup whole milk
  • 2 vanilla extract pure
  • ¼ tsp. kosher salt
  • ½ cup caramel sauce prepared, mixed with 1/2 tsp kosher salt
  • ½ cup roasted salted cashew pieces

Instructions

  1. In med bowl, with an electric mixer, whip heavy cream until stiff. Set aside.
  2. In large bowl, with a whisk, combine the sweetened condensed milk, whole milk, vanilla extract and 1/4 tsp. kosher salt.
  3. Fold the whipped cream into the condensed milk mixture to form a thick ice cream base.
  4. Pour mixture into a loaf pan or other long vessel for freezing.
  5. Drizzle salted caramel over the ice cream base.
  6. Sprinkle top of ice cream base with cashews. With a butter-knife, swirl the mixture to mix.
  7. Cover and freeze until firm.
  8. To serve, let sit out for a few minutes to soften before scooping. Enjoy!

Notes

  • *If you prefer a richer ice cream, omit the whole milk from the recipe.
