Description
This Salted Caramel Pie starts with an Oreo cookie crust that provides a crunchy chocolate base. The filling is made by melting wrapped caramel candies together with heavy cream and sea salt, producing a shiny, creamy caramel layer. This is poured into the crust and allowed to cool and set, typically overnight, to develop a firm but smooth texture.
The pie is then topped with a homemade chocolate ganache made by heating heavy cream until nearly boiling and stirring in semi-sweet chocolate chips until fully melted and smooth. The ganache is poured over the caramel layer and cooled until firm, creating a glossy, rich chocolate finish.
The combination of sweet caramel, salty notes from the sea salt, chocolate depth, and the crunchy Oreo crust delivers a balance of flavors and textures. The pie should be served at room temperature, allowing the caramel and ganache to soften slightly for the best mouthfeel.
Store the pie covered in the refrigerator for up to a week. When serving, bring it to room temperature to soften the layers and enhance the flavor experience.
Ingredients
- 1 Oreo Pie Crust pre-made/store bought
- 75 caramel wrapped
- 1/4 cup heavy cream
- 1/2 teaspoon salt sea salt
For the Chocolate Ganache:
- 1 cup semi sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Unwrap the caramels into a medium size, microwave safe bowl.
- Add the cream and salt to the caramels and microwave in 30 second increments, stirring each time.
- When the caramel is melted together and smooth, pour it into the Oreo pie crust and let it cool completely at room temperature. (I let mine cool overnight).
- Once the caramel has set you can make the ganache. In a microwave safe bowl add the 1/2 c. heavy cream and microwave on high for about 1 and 1/2 minutes, or until the cream just begins to boil on the edges of the bowl.
- Remove and immediately add the chocolate chips.
- Stir until the chocolate chips completely melt and are all stirred in- leaving a creamy chocolate.
- Pour the chocolate over the caramel and let sit at room temperature for a few hours until the chocolate sets up.
- Before serving, sprinkle each slice of pie with a little sea salt.
Notes
- Keep the pie covered in the refrigerator to store for 5 to 7 days without drying out.
- Before serving, set the pie out at room temperature so the caramel and ganache layers soften for better texture.
