Salted Caramel Rice Krispie Treats
Description
Salted Caramel Rice Krispie Treats combine puffed rice cereal with a glossy caramel sauce made from butter, brown sugar, heavy cream, and corn syrup. The salted caramel base thickens on the stove before marshmallows are melted in, creating a smooth, rich syrup. This mix is then folded into the cereal and additional mini marshmallows to bind everything together.
Once pressed firmly into a greased pan, the treats cool into a firm but chewy texture that contrasts with the crisp cereal pieces. The salt enhances the caramel’s sweetness, balancing the dessert’s flavor. Unlike traditional Rice Krispie treats that rely solely on melted marshmallows, this method offers a deeper caramel flavor and a richer mouthfeel.
Serving these treats makes for a sweet snack or dessert that stands apart due to its caramel complexity. Cooling completely before cutting ensures clean slices and easier serving.
Ingredients
- 6 cups rice krispie cereal
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup heavy whipping cream
- 1 tablespoon light corn syrup
- 1 teaspoon kosher salt
- 10 ounces mini marshmallows plus 1 cup of additional mini marshmallows
Instructions
- In a large bowl, combine cereal with the 1 additional cup of mini marshmallows. Set aside. Spray an 9x13 pan with cooking spray and set aside.
- In a large pot, melt the butter over medium heat, stirring constantly. Once butter is melted, add brown sugar, whipping cream, and corn syrup. Cook over medium heat for 4-5 minutes, stirring constantly and scraping the bottom. Once caramel thickens, add salt and stir until combined.
- Remove from heat and add the 10 oz bag of marshmallows. Stir until all marshmallows are melted and mixture is smooth.
- Pour mixture over cereal and marshmallows. Mix until combined. Press mixture into the 9x13 pan. Cover and cool completely before cutting.
Notes
- Measure all ingredients before starting to quickly mix the hot caramel with the cereal.
- Use cooking spray on hands when pressing the mixture into the pan to prevent sticking.
- Choose an 8-inch or 9-inch square pan for thicker treats instead of the 9x13 pan.
- Speed up cooling by covering the pan and placing it in the freezer for about 20 minutes.
- Store treats covered at room temperature for best texture.
