Description

Salted Caramel Rice Krispies begin with melting butter, brown sugar, and heavy cream to create a smooth caramel mixture that is gently cooked to dissolve the sugar without boiling. Mini or regular marshmallows are then melted into this blend to provide additional sweetness and a sticky texture that binds the crisped rice cereal together.   • 1 cup brown sugar firmly packed
  • 6 Tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 10 oz marshmallows (mini or regular-sized will work fine)
  • 7 cups crisped rice cereal
  • ¼ cup semisweet chocolate chips for drizzle, optional, or chocolate baking bar
  • sea salt optional, additional flaky, for sprinkling on top

Instructions

  1. Prepare a 13x9" baking pan by lightly greasing the bottom and sides with butter. Set aside.
  2. In large pot melt together butter, brown sugar and heavy cream on medium-low heat, stirring constantly until butter is melted and sugar is dissolved.
  3. Once butter is melted, increase heat to medium and whisk for 2 minutes (do not allow to come to a boil).
  4. Reduce heat to medium-low.
  5. Stir in salt and vanilla extract.
  6. Stir in marshmallows, stirring constantly until completely melted.
  7. Add cereal and stir well, ensuring ingredients are well combined and cereal is entirely coated by caramel mixture.
  8. Spread into prepared pan.
  9. Melt chocolate in microwave by heating at 15 second increments and stirring regularly.
  10. Drizzle chocolate over cereal in pan. Allow rice krispies to sit until chocolate hardens before cutting and serving.
