Salted Caramels

Salted caramels are rich, chewy confections made by cooking sugar, cream, corn syrup, butter, and salt to a specific temperature, then cooling the mixture until firm. A finishing sprinkle of kosher salt balances the buttery sweetness and enhances flavor. This recipe produces a classic soft caramel treat that can be cut into squares and enjoyed individually.

Description

This salted caramel recipe uses sugar, heavy cream, light corn syrup, butter, and kosher salt cooked together over medium heat to a temperature of 245 degrees Fahrenheit, typically the firm ball stage needed for soft but firm caramels. The recipe includes careful whisking during cooking to achieve smoothness and prevent crystallization.

After reaching the desired temperature, vanilla extract is added for flavor, and the warm caramel is poured into a parchment-lined pan. Sprinkling the remaining salt on top introduces a contrast to the sweet caramel, emphasizing the flavor balance.

Once set for several hours until hardened, the caramel is cut into pieces. The texture will be chewy with a rich buttery taste combined with the creamy vanilla and salted finish expected from this confection.

The recipe suggests timing reminders for cooking steps but does not specify additional storage or serving guidance.

Ingredients

Servings
  • 2 cups sugar
  • 1 1/2 cups heavy cream
  • 2/3 cups light corn syrup
  • 1/2 cup butter unsalted
  • 1 1/2 teaspoons kosher salt divided
  • 1 tablespoon vanilla extract

Instructions

  1. Line an 8x8 inch baking pan with parchment paper.
  2. Add the sugar, heavy cream, corn syrup, butter and 1 teaspoon salt to a dutch oven (with a candy thermometer attached) on medium heat, whisking well until it comes to a boil, then lower the heat to medium-low, whisking well until it reaches 245 degrees.
  3. Turn off the heat and whisk in the vanilla extract then pour it into the baking pan and sprinkle the remaining salt over the top and let it harden for 4-6 hours before cutting.

Notes

  • Use a reliable candy thermometer to reach the correct temperature for proper caramel texture.
  • Allow the caramel to cool and harden completely, about 4-6 hours, before cutting into squares.
