Salted Chocolate Pecan Pie Bars

Salted Chocolate Pecan Pie Bars combine a buttery brown sugar crust with a rich filling of corn syrup, bourbon, and vanilla, studded with dark chocolate and pecans, and finished with a sprinkle of flaked sea salt. The bars have a tender crust and a set but gooey center with nutty chunks throughout.

Description

The recipe starts with a soft, buttery crust made by creaming butter, brown sugar, and flour, baked until lightly browned to provide a sturdy base. The filling mixes eggs, corn syrup, brown sugar, bourbon, and vanilla to create a sweet, slightly boozy custard.

Chopped dark chocolate and coarsely chopped pecans are folded into the filling, adding texture and a bittersweet contrast. Once topped on the crust and baked until set, the bars are sprinkled with flaky sea salt, enhancing the chocolate and nut flavors and balancing the sweetness.

After cooling completely, the bars firm up and can be sliced into squares. These bars can be enjoyed chilled and also freeze well for longer storage, making them suitable for make-ahead desserts or snacks.

Ingredients

Servings

crust

  • 1 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt

filling

  • 3 egg lightly beaten, large
  • 3/4 cup light corn syrup
  • 1/2 cup brown sugar
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate chopped, high-quality
  • 2 cups pecans coarsely chopped, unsalted
  • 1/2 teaspoon sea salt flaked

Instructions

Crust

  1. Preheat the oven to 350 degrees F. Line a 9×13 baking dish with foil or parchment and spray with nonstick spray.
  2. To make the crust: In the bowl of your electric mixer, beat the butter, brown sugar, flour and salt together, starting on low speed and increasing to medium. The mixture will be in coarse crumbs and almost dough like. Press it evenly into the bottom of the greased pan. Bake for 30 to 35 minutes, until slightly browned. Let it cool for about 10 to 15 minutes.

Filling

  1. To make the filling, whisk together the eggs, syrup and sugar until smooth. Whisk in the bourbon and vanilla extract. Use a spatula to fold in the chocolate and pecans. Pour the filling over top of the crust. Bake for 30 to 40 minutes, until the center is set. Mine took closer to 40 minutes. One removed from the oven, sprinkle with flaked sea salt.
  2. Let cool completely before slicing in squares. I love these refrigerated and served cold. They also freeze well too!

Notes

  • Use high-quality dark chocolate for best texture and flavor in the filling.
  • Let bars cool completely before slicing to achieve clean squares.
  • These bars freeze well, making them convenient for advance preparation.
