Salted Nut Roll Bars
Description
This recipe makes bars starting with a yellow cake mix combined with egg and melted butter pressed into a pan as a crust. The hot baked crust is topped with miniature marshmallows that puff upon brief additional baking. Over that, a melted mixture of peanut butter chips, corn syrup, butter, and vanilla is combined with peanuts and crispy rice cereal and spread evenly.
The chilled bars provide a layered experience with a soft cake bottom, gooey marshmallow center, and a crunchy, nutty top. The saltiness of the peanuts complements the sweetness of the marshmallow and peanut butter flavors. These bars require careful timing when warming marshmallows so they puff but don’t melt or brown excessively.
For best results, have all ingredients pre-measured before assembling to avoid setting up too soon. The bars are easier to cut when chilled but should be sliced before becoming too firm. Melting peanut butter chips in short microwave intervals with stirring helps avoid overheating.
Ingredients
- 15.25 oz yellow cake mix
- 1 egg
- ¾ c. butter divided, melted
- 3 c. miniature marshmallows
- 12 oz peanut butter chips
- ½ c. corn syrup
- 1 tsp vanilla
- 2 c. peanuts
- 2 c. Rice Krispies
Instructions
- Mix the cake mix, egg and 1/4 c. butter. Press into a greased 9x13 pan. Bake for 10-12 minutes at 350 degrees.
- Put the marshmallows on top of the hot crust. Return to oven for 3 minutes or until puffed up.
- Melt the peanut butter chips, corn syrup and 1/2 c. butter. Add vanilla and mix. Then add the peanuts and Rice Krispies. Mix well.
- Pour over marshmallows. Refrigerate, but make sure to cut before they get to hard!
Notes
- Measure all ingredients before starting to keep the marshmallow and peanut butter mixtures from setting prematurely.
- Watch marshmallows closely during warming to puff without melting completely or browning.
- Microwave peanut butter chips in 30-second increments, stirring between to prevent burning.
- Chill bars until slightly firm but cut before they become too hard for easier slicing.
