Salted Peanut Butter Rice Krispy Treats
Description
This recipe takes the traditional Rice Krispy Treats and enriches them by browning butter, which imparts a nutty, caramel-like taste. The melted mixture of marshmallows and creamy peanut butter is combined with crisped rice cereal for a chewy and slightly crunchy texture throughout.
After stirring in vanilla extract, the mixture is pressed into a baking dish and topped with flaky salt, which enhances the overall flavor by balancing sweetness with a subtle saltiness. The treats need about 30 minutes to set, allowing them to firm up before slicing into bars of the desired size.
These bars make for a convenient homemade snack that combines the familiar comfort of marshmallow cereal with the creamy depth of peanut butter and the nuanced lift from the salted finish.
Ingredients
- ½ cup butter unsalted
- 20 ounces mini marshmallows this is usually 2 bags worth
- ¾ cup peanut butter creamy
- 1 teaspoon vanilla extract
- 8 cups crisped rice cereal
- salt for topping, flaky
Instructions
- Spray a 9x13 inch baking dish with nonstick baking spray.
- Melt the butter in a large pot over medium heat. Continue to cook it without stirring, watching it constantly, until brown bits begin to form on the bottom. Reduce the heat to low and stir in 15 ounces of the marshmallows. Stir in the peanut butter.
- Stir the mixture with a spatula continuously until the marshmallows and peanut butter melt completely. Stir in the vanilla extract.
- Pour in the cereal. Stir until it’s about halfway mixed, then stir in the remaining marshmallows. Mix until the marshmallows are evenly distributed.
- Press the mixture into the 9x13 dish. Sprinkle the top with flaky salt. Let the bars set and cool for 30 minutes before cutting. Slice them as small or as large as you’d like.
