Description
The recipe builds from a soft peanut butter cookie dough pressed into a pan and baked until firm to form a sturdy base. Immediately after baking, miniature marshmallows are sprinkled on top and briefly melted to create a sticky, sweet layer. A cooked mixture of light corn syrup, butter, vanilla, and peanut butter chips is then stirred with crispy Rice Krispies cereal and salted peanuts, producing a sticky, crunchy topping.
Once this topping is spread over the marshmallows and allowed to cool, the bars hold together yet offer a contrast of chewy marshmallow and crunchy cereal and nuts. The salted peanuts enhance the peanut buttery sweetness with bursts of saltiness.
Chilling the bars before cutting helps achieve clean slices. These bars are suitable for dessert or snack time, combining textural variety with familiar peanut and marshmallow flavors in a portable form.
Ingredients
- 1 pouch peanut butter cookie mix 1 lb. 1.5 oz size, Betty Crocker brand
- 3 tbsp vegetable oil
- 1 tbsp water
- 1 egg
- 3 cups miniature marshmallows
- 2/3 cup light corn syrup
- 1/4 cup butter
- 1 tbsp vanilla extract
- 1 oz. bag peanut butter chips
- 2 cups Rice Krispies cereal
- 2 cups peanuts salted
Instructions
- Preheat oven to 350 degrees and grease a 9x13 pan. Set aside.
- Mix cookie mix, oil, water and egg in a large bowl until combined and a soft dough forms. Press this mixture into the bottom of your greased pan.
- Bake this for 12 - 14 minutes or until set. Remove from oven and immediately sprinkle on marshmallows and put back in oven for 1 - 2 minutes or until the marshmallows puff up.
- In a large pot, add corn syrup, butter, vanilla and peanut butter chips and cook on low heat. Stir constantly until all combined and chips are melted.
- Remove this mixture from the heat and stir in the Rice Krispies and nuts. Spoon mixture evenly over the marshmallows, trying to cover them all.
- Let cool until set or refrigerate for 30 minutes before cutting into bars.
