Salted Rolo and Nutella Stuffed Double Chocolate Cookies

These Salted Rolo and Nutella Stuffed Double Chocolate Cookies are rich chocolate treats featuring cocoa-infused dough full of semi-sweet chocolate chips. Each cookie is filled with a Rolo candy and a dollop of Nutella, then sprinkled with sea salt, offering a combination of gooey caramel and hazelnut spread inside a tender chocolate cookie with a hint of saltiness on top.

Description

This recipe starts by melting butter then mixing in brown sugar to dissolve, producing a smooth base for rich chocolate dough. Cocoa powder and baking powder, along with salt, provide chocolate depth and leavening. Flour is stirred in until combined, and semi-sweet chocolate chips add bursts of chocolate throughout. The dough is divided into balls, and a thumb-sized indentation is made in each one to hold the fillings.

Each indentation is stuffed with a Rolo candy and a half teaspoon of Nutella before being sealed with another piece of dough and gently flattened. The cookies are then topped with a sprinkle of sea salt to enhance the chocolate and caramel flavors. Baking at 375°F for 9 to 11 minutes yields cookies with a chewy exterior and molten filling.

The contrast of creamy Nutella, melted Rolo caramel, and chocolate cookie, paired with salt, makes these cookies uniquely rich and satisfying. They work well as an indulgent dessert or special occasion treat.

Ingredients

Servings
  • ½ cup butter , unsalted
  • cup brown sugar , packed
  • 2 egg
  • ½ cup cocoa powder , I used Nestle
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups flour
  • ¾ cup chocolate chips I used Ghirardelli's, semi-sweet
  • 16 Rolos , or caramels
  • 8 teaspoon Nutella
  • sea salt for topping

Instructions

  1. Preheat oven to 375℉. Line a baking sheet with parchment paper.
  2. Melt the butter in a medium saucepan, over medium heat. Remove saucepan from heat. Add brown sugar and stir until sugar has dissolved. Add eggs and stir. Next add the cocoa, salt and baking powder and stir until well combined. Add flour and stir until all the flour is fully combined in the mixture. Stir in chocolate chips.
  3. Divide the cookie dough into 2 big pieces and set one aside. Take one of the pieces and start forming 1 inch balls, you should get about 16 balls. Place them on the prepared baking sheet.
  4. Using your thumb make a large indentation in each ball. Stuff each cookie with 1 rolo, then ½ tsp of Nutella.
  5. Take the other piece of cookie dough and divide it into 16 pieces. Flatten each piece out, place it on top of the stuffed cookies and seal the edges. Flatten the cookies a bit with your fingers or a spatula, then sprinkle a bit of sea salt over each cookie.
  6. Bake for 9 to 11 minutes.
