Salted Watermelon Margarita Popsicles
Description
The Salted Watermelon Margarita Popsicles recipe starts by extracting fresh watermelon juice, which forms the base. This juice is simmered briefly with sugar to create a simple syrup, which is then combined with fresh lime juice, silver tequila, and Grand Marnier for a layered citrus-cocktail flavor. Lime slices are arranged in popsicle molds before adding the watermelon mixture, which is then frozen for several hours. A sprinkle of pink Himalayan salt on serving enhances the overall flavor by balancing sweetness and acidity.
The flavor profile is bright and summery with notable watermelon sweetness and lime tartness accented by tequila's subtle bite. The texture is smooth and icy with the occasional citrus bite from the lime slices. The freezing method ensures a firm popsicle that holds its shape.
These margarita popsicles serve as a chilled dessert or adult refreshment in warm seasons. They pair well with casual outdoor meals or as a novelty at gatherings where frozen cocktails are appreciated.
Ingredients
- 2 cups watermelon fresh juice
- 1 cup sugar
- 1/2 cup lime juice fresh
- 1/3 cup tequila silver
- 2 tablespoons Grand Marnier
- 10 lime slices
- pink Himalayan salt
Instructions
- To make the fresh watermelon juice, puree 3 to 4 cups of watermelon chunks in a blender or food processor. Pour through a fine mesh sieve and press with a spoon to release all the juice.
- Combine the sugar and 1 cup of watermelon juice in a saucepan over medium heat. Bring to a simmer, whisking so the sugar dissolves. Simmer for 1 to 2 minutes, then turn off the heat. Stir in the remaining watermelon juice, lime juice, tequila and grand marnier.
- Fill each popsicle mold with a lime slice. Pour the watermelon mixture over top. Freeze according to your popsicle maker’s directions, for at least 4 to 6 hours. Serve with a sprinkle of sea salt.
