  • 1 pound red chili peppers Thai is traditional, but red jalapenos, serranos and cayenne peppers are good substitutes, stems removed
  • 2 tablespoons rice vinegar
  • 1 tablespoon salt

OPTIONAL ADDITIONS

  • 2 garlic cloves
  • 1 teaspoon lime juice

Instructions

  1. Add all of the ingredients to a food processor or other grinder. A Molcajete is a great option here.
  2. Grind until a coarse paste forms. You can strain out some of the excess liquid if you'd like.
  3. Add to a jar and cover. Refrigerate until ready to use.
