Sambal Oelek Recipe
Description
This Sambal Oelek recipe uses a pound of red chili peppers as its base, traditionally Thai chilies, combined with rice vinegar and salt to create a spicy, tangy paste. Optional additions like garlic cloves and lime juice can be included to add depth and brightness. The preparation involves grinding all ingredients into a coarse paste, which can be strained to remove excess liquid if desired. While it is commonly used in its raw form to maintain fresh chili flavor and heat, the paste can also be simmered gently for about 10 minutes to mellow the flavors before storing.
The texture is coarse rather than smooth, emphasizing the chili pieces and freshness of the ingredients. Sambal Oelek works well as a condiment or ingredient to add heat and acidity to various dishes, such as noodles, meats, or stir-fries.
Storing the paste in the refrigerator after preparation helps maintain its flavor and preserve it. Making sambal at home allows control over heat levels and freshness, and the recipe yields about 1.5 cups of paste.
