Samoa Cookie Protein Balls

Samoa Cookie Protein Balls have the same caramel, coconut, and chocolate flavor of the beloved Samoa cookies, but they're made with wholesome ingredients and easy to make at home! Keep them in the fridge for a sweet and satisfying snack!

Ingredients

For the protein balls:

  • 1/4 cup coconut divided, shredded, plus 3 tablespoons
  • 1/2 cup almond butter creamy
  • 3 tablespoons pure maple syrup
  • 2 Medjool dates pitted, large soft
  • 1 teaspoon vanilla extract pure
  • 1/2 cup rolled oats old fashioned
  • 1 vanilla protein powder or unflavored, scoop
  • 1/4 teaspoon kosher salt
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips
  • sea salt for sprinkling on top, flaky

For the melted chocolate:

  • 1/2 cup chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Preheat oven to 350 degrees F. Place the coconut on a baking sheet that has been lined with parchment paper. Spread out in an even layer. Bake for 5 minutes, stirring once, or until coconut is lightly toasted. Remove from the oven and let cool.
  2. In a food processor, combine the almond butter, maple syrup, dates, vanilla extract, oats, protein powder, and salt. Process until well combined.
  3. Transfer mixture to a small bowl. Stir in 1/4 cup of the toasted coconut, chia seeds, and mini chocolate chips. Form the mixture into balls, about 1 tablespoon per ball.
  4. Add the chocolate chips and coconut oil to a small microwave safe bowl. Place in the microwave and heat in 30 second intervals until smooth.
  5. Line a baking sheet or tray with parchment paper.
  6. Dip the bottoms of energy balls into the chocolate and place on the prepared baking sheet. Drizzle the tops with chocolate and immediately sprinkle with remaining toasted coconut and flaky sea salt.
  7. Place the balls in the refrigerator for about 1 hour, or until the chocolate hardens. Enjoy!

Notes

  • If your dates aren’t super soft, you can soak them in hot water for 10 minutes before using.
  • Store the protein balls in an airtight container in the refrigerator for up to 2 weeks. You can also freeze for up to 3 months.
