Sardine Pasta
Description
Sardine Pasta is prepared by cooking spaghetti until al dente, adding spinach near the end of its cook time. Separately, shallots are softened in olive oil, followed by garlic and chili flakes for a touch of warmth. Sardines, lemon juice and zest, fresh parsley, and chopped sun-dried tomatoes are combined with the aroma base to form a sauce with a mix of citrus brightness and umami richness.
The drained pasta and spinach are folded into the sardine mixture, with reserved pasta water added to achieve a silky coating that binds the ingredients. The dish balances the seafood's mild oiliness with tang and subtle spice from the lemon and chili.
Sardine Pasta can be served with a drizzle of olive oil and additional cracked black pepper or Parmesan for extra flavor if desired. Using fresh tagliatelle can speed preparation.
Ingredients
- 140 g spaghetti
- 2 tablespoon olive oil
- 2 shallot finely diced
- 3 garlic crushed, clove
- 1 lemon juice and zest only
- 80 g spinach
- 160 g sardines canned
- 7 g parsley finely chopped, fresh
- 1 pinch sea salt
- 1 pinch black pepper
- 1 teaspoon chili flakes less if preferred
- 50 g sun-dried tomatoes chopped
Instructions
- Cook 140 g Spaghetti according to the packet instructions - normally 10-12 minutes.
- Heat 2 tablespoon Olive oil in a pan and cook 2 Shallots until softened, about 2 minutes.
- Add 3 Garlic clove and 1 teaspoon Chilli flakes. Stir and cook for a further minutes.
- About 2 minutes before the spaghetti is cooked, add 80 g Spinach to the water.
- Add 160 g Sardines, juice and zest of 1 Lemon, 7 g Fresh parsley, 50 g Sun-dried tomatoes and 1 pinch Sea salt and ground black pepper to the shallots. Gently stir to avoid breaking up the sardines too much.
- Drain the spaghetti and spinach, reserving a small amount of pasta water.
- Add the drained spaghetti, spinach and reserved water to the sardine mix. Mix well and serve.
Notes
- Reserve pasta water to create a smoother, silkier sauce when combining ingredients.
- Using fresh tagliatelle reduces cooking time for a quicker meal.
- Add a splash of olive oil just before serving to enhance flavor and texture.
- Serve with extra Parmesan and cracked black pepper to taste.
