Saucy Brown Sugar Baked Pork Chops

Saucy Brown Sugar Baked Pork Chops are thick-cut pork chops baked in a sweet and tangy sauce made from brown sugar, soy sauce, Worcestershire sauce, ketchup, and garlic. The pork cooks until tender, absorbing the caramelized glaze which can be thickened into a rich sauce, combining sweet, savory, and umami notes.

Description

This recipe begins by mixing a sauce that blends brown sugar with soy sauce, Worcestershire sauce, garlic, and ketchup. Thick pork chops are placed in a baking dish and coated with this mixture. They bake at 350°F until reaching a safe internal temperature, which allows the sauce to infuse the meat as it cooks.

If the sauce is thin after baking, it can be transferred to a saucepan and thickened with a cornstarch slurry over heat, resulting in a glossy, clingy glaze perfect for drizzling over the chops. The texture is tender and juicy, with the sauce providing a balance of sweet caramelized sugar and savory depth from the soy and Worcestershire.

The dish pairs well with a variety of sides and is straightforward to prepare, making it suitable for an approachable yet flavorful pork dinner. Adjusting the sauce proportions allows tailoring sweetness and tanginess.

Monitoring internal temperature with a meat thermometer is advised due to variability in chop thickness and oven temperatures to ensure juiciness and food safety.

Ingredients

Servings
  • 4 thick pork chops
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon garlic minced
  • 1/4 cup ketchup
  • 1/2 cup brown sugar
  • cornstarch slurry

Instructions

  1. Preheat your oven to 350 °F.
  2. Stir together the soy sauce, Worcestershire, garlic, ketchup and brown sugar . Adjust this mixture to taste, some people like more ketchup along with the brown sugar. Once you have adjusted it to taste, move on to the next step.
  3. Place the pork chops in the bottom of a baking pan, cast iron skillet or oven safe skillet of your choice.  Pour the sauce over the pork chops.
  4. Bake in the oven for 25-30 minutes, or until the pork chops reach an internal temperature of 145 °F.
  5. Remove and plate the pork chops. If the sauce is watery, pour the sauce into a small saucepan and place over medium-high heat on the stove. Prepare the cornstarch slurry and whisk into the sauce to thicken.
  6. Serve the pork chops with the sauce drizzled on top.

Notes

  • Use a meat thermometer to ensure pork chops reach at least 145°F for safe consumption.
  • The sauce can be adjusted by adding more ketchup or brown sugar to suit taste preferences.
  • If sauce remains watery after baking, thicken it on the stove with a cornstarch slurry before serving.
