Saucy White Beans with Spinach
Description
Saucy White Beans with Spinach centers on cannellini beans cooked in a skillet with olive oil, minced garlic, and halved grape tomatoes. The tomatoes break down during a brief simmer, forming a light, slightly thickened sauce. Dried oregano and fresh cracked black pepper season the dish, while the reserved starchy liquid in the beans helps to bind the sauce without needing to rinse them. Parmesan cheese is stirred in as the sauce simmers, melting to provide savory depth and a creamy texture.
Fresh spinach is added last and allowed to wilt gently into the warm bean mixture, contributing color and a tender leafy texture that contrasts with the beans. The flavor blend is bright and savory, with a gentle garlic herb presence enhanced by the richness of cheese.
This dish can be served hot as a light main or side, paired well with crusty bread to soak up the flavorful sauce.
Ingredients
- 4 cloves garlic $0.32, minced
- 2 Tbsp olive oil $0.26
- 1 pint grape tomato $2.29, halved
- 2 oz. cans cannellini beans $1.78, drained
- 1/2 cup water $0.00
- 1/2 tsp oregano $0.05, dried
- 1/4 tsp black pepper $0.02, freshly cracked
- 1/4 cup Parmesan Cheese $0.36, grated
- 2 cups spinach $0.60, fresh
- 1/8 tsp salt $0.01
Instructions
- Mince the garlic and slice the tomatoes in half. Add the olive oil to a large skillet and heat over medium. Add the garlic and sauté for about one minute, or just until the garlic becomes very fragrant.
- Add the tomatoes to the skillet and stir to combine.
- Add the drained canned white beans to the skillet (do not rinse the beans, the residual starchy liquid helps create the sauce), along with the water, oregano, and pepper. Stir to combine.
- Allow the beans to come up to a simmer. Simmer the beans, stirring occasionally, until the tomatoes begin to break down and the liquid reduces to a light sauce (about 5 minutes).
- Add the Parmesan cheese to the skillet and stir until it has melted into the sauce. If the sauce becomes too thick or dry, you can add a splash of water to loosen it up.
- Add the fresh spinach to the skillet and stir to combine. Allow the spinach to wilt.
- Taste the beans and adjust the salt, pepper, or other seasonings to your liking. Serve hot with crusty bread for dipping!
